And let me tell you, you can definitely tell the difference between fresh cacao and cacao that's been sitting in a warehouse for extended periods of time.
Why is this relevant?
Well, if you were to walk into your local grocery store and go directly to the chocolate aisle, 90% of what you’d be looking at is chocolate made from cacao that was harvested years ago!
Now, this chocolate isn’t rancid, however, the chocolate is just low quality, kind of like a bottom shelf choice.
And let’s not forget that most of the chocolate you’re able to buy at the store is filled with shocking amounts of sugar, additives, and preservatives.
But that’s not the only reason to feel guilty about eating that store-bought chocolate…
Did you know cacao farmers in West Africa—who source around 70% of the world's cacao— are doing detrimental damage to our environment as well?
Experts estimate that 70% of the country's illegal deforestation is related to cacao farming.
And a very sad and unfortunate truth to accompany that statistic is that many of these same cacao farmers engage in human trafficking and child slavery for their harvesting.

To me, this is downright unfair.
Numerous chocolate companies have hidden behind their sweet disguise without disclosing the alarming truth behind the practices of their businesses!
They use low-quality ingredients that are farmed in ways that not only hurt the environment but also hurt the people living in the native region.
After discovering all of this in the early phases of building a fine chocolate business, I set out on the path to figure out how to not only consistently produce the highest quality product…
But to also do it in a way that focused on fair trade practices and didn’t harm the environment!
We went through dozens of suppliers and farms before we found one that not only had the best cacao beans but also the best practices…
It took years and years before I could confidently say that the ingredients inside the chocolate truffles we were producing here at Living Ratio were the best that money could buy.
This may seem like a bold thing to say…
But after seeing countless people’s faces light up after taking just one bite of our signature truffles, I stand by my claim!

Each and every single truffle that we make starts off in the mountains of Peru on a small farm filled with chocolate trees that are up to 50 years old.
